The head baker works a step ahead of you on the big screen. Fall behind and someone will come and help.
Everything goes on the table, the room votes, one apron gets handed over. Then you take your bake home in a box.
The main event. Groups of two to fifteen, one recipe, a winner at the end. Bar open throughout.
Slower, no competition, proper technique. Sourdough, laminated dough, patisserie basics. Kids' sessions on Saturday mornings.
A different cuisine each month — Greek, Korean, Indian, Japanese — taught by someone who grew up cooking it.
Two hours in the building, sixty of them baking. Come at seven, leave at nine with a box under your arm.
